Fresh Figs, Feta & Watermelon - A Great Summer Salad


Ingredients: 
(serves 4)
4 cups Arugula or Watercress
6 fresh figs cut into quarters
1.5 cup Watermelon, one inch cubes
¼ cup Red onion, sliced thin (optional)
4 ounce feta cheese 
6 mint leaves, finely chopped
Juice of 1/2 lemon
2 tablespoons olive oil
Balsamic Vinegar, drizzle 
Toss cut fruit, feta and greens into a large bowl.  Add olive oil and fresh lemon juice. Toss.  Serve with drizzle of a good balsamic vine
